Ultimate Reuben Dip

This Reuben dip recipe is one of our favorites! It's easy to make, with deli corned beef or pastrami and it always gets gobbled up fast! All you need is a few simple ingredients: deli corn beef, sauerkraut, Swiss cheese, mayonnaise, Russian dressing, and cream cheese.

Ingredients
  

  • 8 oz Corned Beef reserve 1 tablespoon for topping.
  • cup Thousand Island Dressing
  • 1 cup Sauerkraut See Notes
  • 4 oz Chive and Onion Cream Cheese
  • 1 Cup Mayonnaise
  • 1 ½ Cups Shredded Swiss Cheese

Reuben Dip Topping

  • ½ cup Shredded Swiss Cheese
  • 1 tablespoon Corned Beef (reserved from 8 oz above)
  • 1 teaspoon Fresh Chives

Instructions
 

  • Preheat oven to 350 degrees. Spray a casserole dish with non-stick cooking spray.
  • Grate 2 cups of swiss cheese for dip and topping.
  • Add your mayo, thousand island dressing, and cream cheese to a bowl using a hand mixer or a whisk mix ingredients together until completely combined.
  • Chop the corned beef into small pieces and add it into the bowl Add 1 ½ cups of cheese to the bowl reseving the rest of cheese to use later on the top.
  • Squeeze out your sauerkraut and add it to the bowl. Mix your ingredents all together until combined.
  • Add in the dip mixture to greased pan and top with extra swiss cheese, chives, and chopped corned beef
  • Bake for 25 minutes or until bubbly and golden. Serve immediately with rye crackers, bagel chips, rye bread, or tortilla chips.

Notes

Make sure to squeeze the liquid out of the sauerkraut completely or it will make the dip watery
