Preheat the air fryer to 400 degrees.
Whisk one large egg in a small bowl.
Add pork rinds to a large Ziploc bag and use a rolling pin to crush up the pork rinds. {You could also use a food processor if you prefer.}
Add the crushed pork rinds to a bowl. Add garlic powder, paprika, and salt to the bowl of crushed pork rinds.
Using a kitchen towel or a paper towel, pat the pickle slices until they are dry. Then add them to a large bowl.
Add the coconut flour and mix to evenly coat the pickles in the coconut flour.
Using tongs, dredge the pickle slices in the egg wash letting the excess drip off. Next, Press the pickles into the pork rind mixture. Transfer to a plate and repeat until all of the pickles have been coated.
First, spray non-stick cooking spray on cooking trays or the basket. Arrange the pickles in a single layer and spray the top of them with cooking spray to help them get crispy. Air fry for 10-12 minutes.
Depending on the size of your air fryer, you may need to work in small batches.
Serve immediately with your favorite dipping sauce
