Talk about a quick and easy dessert, especially for those nights when you have a sweet tooth but not a lot of groceries or patience to cook something elaborate up. My kids love this gluten free chocolate mug cake recipe because they can make it themselves (yes it's that easy) and it's so cute and little sized, not to mention completely flourless. WIN!
Quick and Easy Gluten Free Desserts
Normally, when you think of a specialty recipe like "gluten free" you imagine all the weird ingredients you'll probably have to go buy or some elaborate time consuming process like "soak such and such for 3 hours." Um, who has that kind of time when you NEED that sweet treat and it's already 9pm. Not me. This recipe is the answer to my every night dessert prayers.
I actually came up with this gluten free chocolate mug cake idea because I needed some sweet treats after a long day. It was already late and I was tired AF. And to top it off, tomorrow was pay day so no groceries left in the house. It was the type of night where you start wondering what you can make with a bag of rice and blackberry jelly.
I was not about to whip up an entire sheet cake just for myself. (I would eat a whole sheet cake myself, just to be clear). So this gluten free chocolate mug cake was born. So easy, quick, and fudgey delicious.
Flourless Mug Cake
Because I wanted to really go hard at this new-ish gluten free lifestyle we're living, I haven't bought flour in a long time. I am going to be ordering a nice big bag of Bob's Red Mill 1-1 ratio GF Flour today because I'd like to be able to bake basic things again. But, for this recipe, there was no flour in the house and no flour needed.
This mug cake is super dense and fudge-tastic. It's amazing. I wouldn't add flour to it if I could. Top it off with a scoop of Ice Cream and maybe some caramel drizzle and you have a perfect single serve dessert!
Gluten Free Chocolate Mug Cake
Making this little cake is so easy and quick but there are little tricks to it to get it perfect. So, get a mug, the bigger the better if you want to avoid a mess. In your mug, using a whisk, combine all of your ingredients. Make sure to beat the egg first, then mix the almond milk into it to really smooth it out. Then you can add the other ingredients and stir really well to combine thoroughly.
I highly recommend using a whisk and really making sure that everything is combined until smooth. Trust me you don't want to find weird chocolate scrambled egg on the bottom of your mug cake.
Once everything is mixed well, microwave it over a paper plate for 1 minute and 20 seconds. You can check this little cake just like a normal cake, with a toothpick to see if it comes out clean. If it doesn't add another 10 seconds at a time to finish the cake.
You may see the cake rise in the microwave and start to bubble over the edges. Don't freak out! This is normal and just part of the magic and fun of a mug cake 🙂 Eat right out of the mug or dump it over onto a plate and enjoy this delicious, gluten free, dairy free, easy peasy dessert!

Gluten Free Chocolate Mug Cake
This gluten free chocolate mug cake recipe is so quick and easy to make! Just using unsweetened cocoa powder and eggs plus a few other key ingredients, you can microwave your own little slice of chocolate fudge heaven.
Ingredients
- 1 Egg
- 1 tablespoon Vanilla Almond Milk, *see note
- 1 tablespoon Sugar
- 1 tablespoon Unsweetened Cocoa Powder
- ¼ teaspoon Baking Powder
Instructions
- In a large mug, beat the egg really well.
- Add in the vanilla almond milk and beat until smooth.
- Add the rest of the ingredients and combine really thoroughly.
- Microwave over a paper plate (or regular plate) for 1 minute and 20 seconds. Insert a toothpick in the center and if it comes out clean it is done. Otherwise just microwave for 10 more seconds.

*Can use normal milk, or for a richer taste- cream. You can also use plain almond milk with ½ teaspoon of Vanilla extract.
