There's no such thing as too many holiday cookie recipes, and trust me there are a ton online. Want to make something new this year? Try your hand at these easy Gluten Free Tri-colored Christmas cookies! Made with only a few simple ingredients that you probably already have in your pantry, they are so easy to make and sure to be a huge hit!
I love to bake and found that gluten free baking can be just as simple as regular baking, you just need to use a gluten free flour blend. I like to use Bob’s Red Mill 1 to 1 Baking flour which combines sweet white rice flour, finely ground brown rice flour, whole grain sorghum flour, potato starch, and tapioca flour with a touch of xanthan gum—just enough to create a chewy delicious cookie!
Ingredients for gluten free sugar cookies:
- ½ cup butter, softened
- ½ cup sugar
- ¼ cup brown sugar
- 1 egg
- ½ teaspoon vanilla
- 1 ½ tablespoons milk
- 1 ¾ cup gluten-free flour blend (like Bob Red Mill)
- 1 teaspoon baking powder
- ½ teaspoon salt
How to Make Tri Colored Gluten Free Christmas Sugar Cookies:
First, preheat the oven to 350°F. Line two baking sheets with parchment paper and set them aside. In a medium bowl, whisk together the gluten-free flour, baking powder, and salt. Set aside. Next in a mixing bowl, cream together the butter and sugar until light and fluffy, about one to two minutes. Add in egg, vanilla, and milk, mix until combined. Slowly add in the dry ingredients and mix until combined.
Split the dough into three balls and dye one of the balls red and the other green (or whatever color you desire) by kneading the dough with your hands until blended evenly. Lay parchment paper down on your counter and break up pieces of the dough and place them in no particular order on the parchment paper. Top with the second sheet of parchment and roll the dough out to about ¼-inch thickness.
Cut shapes out of the dough with any cookie cutter you'd like. I like the metal ones because they seem to cut the best for me. You can find the ones I use by clicking here.
Once you have your cookies all cut out carefully remove the extra dough around them and place them on the parchment-lined baking sheet about an inch apart from each other. Bake for 10-12 minutes. Cool before removing the cookies from the tray so they don't break apart.
