Ingredents For St. Patrick’s Day Irish Marshmallow Pops Recipe

    • Marshmallows
    • Chocolate Chips - You can use or semi-sweet or dark chocoalte chips. It just depends on your preference.
    • White Chocolate Chips - use your favorite white chocolate chips.
    • Coconut Oil - The coconut oil makes the chocolate harden faster.
    • St. Patrick's Day Sprinkles - your favorite green and gold sprinkles
    • Themed Staws - you can find these at the dollar tree or walmart or you can use a skewer cut down.

Making St. Patrick's Day Irish Marshmallow Pops

marshmallows on gold and silver sticks

First, line a baking sheet with wax paper. cut your paper straws in half. Then place ½ of straw into each marshmallow until all the marshmallows have straws in them.

Place your semi-sweet chocolate chips in a microwave-safe bowl. Add 1 teaspoon of coconut oil on top of the chocolate chips. The coconut oil will help it harder faster, kind of like the magic shell you use on ice cream.

Microwave the semi-sweet chocolate chips at 50% power for 30 seconds then remove and stir. Continue to microwave the chocolate, 30 seconds at a time, Alternating between heating and stirring. This will help even out the heating so that each piece gets warm without burning or overcooking any others on top.

Roll the marshmallows on the stick in the melted chocolate until completely covered top to bottom. Place the covered marshmallows on the parchment-lined baking sheet.

This will leave a flat side on the marshmallow, if you want it rounded all the way around you will need to let it dry standing up. I would use a craft foam block like the ones you would stick fake flowers in and stick the pops in them to dry.

Place the marshmallow pops in the refrigerator to speed up hardening. .

While the marshmallows harden melt your white chocolate the same way you did the semi-sweet chocolate but without the coconut oil. Microwave the white chocolate chips at 50% power for 30 seconds then remove and stir. Continue to microwave the chocolate, 30 seconds at a time, Alternating between heating and stirring.

Spoon the melted white chocolate into a pastry bag and cut a small tip at the end of the bag. This is the fun part, take the pastry bag and pipe white chocolate over the pops back and forth in thin lines. Then add your choice of sprinkles. Cool again in the refrigerator for a few minutes until the white chocolate hardens.

How To Store St. Patrick's Day Irish Marshmellow Pops

Marshmallow Pops will last for 3-5 days in an airtight container. You do not need to store them in the refrigerator but if you want to you can just take them out about 20-30 minutes before eating so the marshmallows will soften back up.
