What could be more perfect for a spring brunch or a picnic at the beach than delicate, tasty, fresh English cucumber sandwiches? These are so easy, SO yummy, and won't weigh you down. They might just be the perfect summer day sandwich. Cucumber sandwiches are so fresh, light, and crisp tasting, not to mention how cute and posh they are? Have fun with these cuties!
Traditional Cucumber Sandwiches
Cucumber sandwiches are those dainty little sandwiches found in places like English tea parties and country clubs. Now I've never actually been to either of those places because, well, I don't have fancy things. But I do love cucumber and savory, tasty little sandwiches like these are right up my non-posh alley.
The traditional English cucumber sandwiches are made with a thin coat of butter on each slice of bread and thinly sliced cucumber. That's exactly what we like to use on ours, but another popular option is cream cheese in place of the butter- more of an american option. We technically have to be dairy free for the sensitive stomachs around here, so we skip out on the cream cheese but we do still keep some real butter in our diet. We generally get a big roll of Amish butter from our local grocery store and it's amazing. (If you're in Minnesota it's at Cub- you're welcome)
Seasoning
There are so many ways to season up your cucumber sandwiches. And let's be real the seasonings are what make the sandwich more than veggies and some bread so make them count right?
This recipe is super simple but so so fresh, bright, and tasty! Some sea salt, fresh pepper, chopped fresh mint, and chopped chives. So freaking simple and good. And honestly, my kids gobble these up when we make them in the summer. I always bring them to the beach, snack time at the library, all the places you guys.
Dainty English Cucumber Sandwiches
Ok, so traditionally these English cucumber sandwiches are cut into dainty little finger tea sandwiches. I usually just take some pretty cookie cutters if I'm making these for a tea party or brunch or party and cut them up that way- easy peasy.
If I'm just making these at home- way more realistic- I definitely just make them like a normal sandwich. Crusts on for sure. Who has the time to cut them every time? More often than not though, my daughter will cut them with her little cookie cutters anyways. So either way we have some fun sandwiches to take out.
Alternatives
So if you don't want to use butter or just want something different to try, definitely try using chive and onion cream cheese instead. You can also use plain cream cheese obviously, but the onion and chive flavor is so so good! Maybe take it easy on the extra chives in this recipe but definitely keep the mint and seasonings.

English Cucumber Sandwiches
These ADORABLE super easy, simple, and tasty cucumber sandwiches are the best! This traditional english cucumber sandwich recipe has fresh ingredients and is such a perfect appetizer or recipe for a tea party.
Ingredients
- 1 English Cucumber
- Butter, room temp
- Sea Salt
- Fresh Ground Black Pepper
- Mint, finely chopped
- Chives, finely chopped
- Your Favorite Sliced Bread
Instructions
- Put a thin layer of butter on each slice of bread.
- Thinly slice the cucumber up and place it on the buttered slice of bread.
- Add sea salt and pepper to taste and sprinkle on your mint and chives.
- Top with the other slice of bread and enjoy!
- Option: cut the crusts off if you want! 🙂
