Gluten Free Bird Nest Cookies
We all know that gluten free baking can be difficult, but this recipe couldn't be any easier. It's also vegan and did I mention extremely tasty?! You can find gluten free chow mein noodles at many stores now or you can click here to get the ones I use from Amazon. They can be a bit crunchier but I found that they softened nicely when stirred with the warm peanut butter and butterscotch.
Dairy Free Bird Nest Cookies
If you want to make this vegan you can use vegan butterscotch chips I like the King David brand and you can find those on amazon. Ingredients for No Bake Butterscotch and Peanut Butter Bird Nest Cookies:
- Chow Mein Noodles- If you need these to be gluten free you can use Gefen Gluten Free Chow Mein Noodles from amazon or whatever brand your grocery store has.
- Peanut Butter - You want to use creamy peanut butter for this recipe.
- Butterscotch Chips- you could also add in chocolate chips. Use vegan chips if you want it to be dairy free!
- chocolate easter eggs - like cadbury mini eggs
How To Make No Bake Butterscotch and Peanut Butter Bird Nest Cookies:
These bird next cookies take less than 10 minutes to make you can't get easier than that!
To Use Stovetop
Using a small saucepan, add the peanut butter and butterscotch chips cook over low heat stirring for about 3 minutes until melted and smooth.
To Use Microwave
In a large microwave-safe bowl add the butterscotch chips and peanut butter. Microwave stirring after every 30 seconds until melted and smooth.
In a large bowl, combine the melted mixture with the chow mein noodles and mix until everything is combined. Spray the muffin pan with nonstick cooking spray. Fill each opening of the muffin pan with a spoonful of the chow mein cookie mixture.
Make a small indention in each cookie to create the nest look with a tart tamper or with the handle of a wooden spoon. Refrigerate for 20-30 minutes or until nests are firm
After bird nests have cooled carefully remove them from the pan, you can use a butter knife to scrape around the cookie and pan to release the bird nest cookies easier.
Fill each bird nest cookie with Cadbury mini eggs and enjoy! This recipe will make around 12 cookie nests!

- Refrigerate: You will want to refrigerate the birds nests for about 20-30 minutes or until the chocolate has hardened.
- Chips: Add in your favorite type of chips to make this your own!
- Chow Mein Noodles: If you don’t have noodles on hand, or you can't find gluten free noodles you can use chopped pretzels instead
- Eggs: You could use other types of eggs like M&M’s, jelly beans and maybe even a peep bird.
