This parmesan roasted zucchini recipe is so easy to make and so yummy! The edges get slightly crispy and the flavor of parmesan with some fresh cracked pepper makes this more of a treat than just another veggie recipe. It's always a good idea in my book to give a healthy veggie a little boost with something like roasted parmesan right? My kids love it and if you have kids, I'm sure they will love it too. Not only that, but it is SUCH an easy side for any dinner. Make dinner time easier right? I'm always on board for that.
Oven Baked Zucchini Recipe
The easiest way to cook a vegetable and keep flavor, health benefits, and make it easy and uncomplicated is always- 100%- to roast it on a pan with a drizzle of Olive Oil in the oven. Just add some flavor with seasonings and something like parmesan and you're good to go.
This recipe only has 3 ingredients (besides the obvious zucchini):
- Powdered Parmesan
- Olive Oil
- Black Pepper
Roasting a veggie in the oven like this is not only flavorful, but one of the healthier ways to cook veggies.
Dry cooking like roasting helps vegetables to retain more vitamins than boiling does. It may even retain more antioxidants than steaming your veggies.
Even though cooking your vegetables always kills a small amount of the nutrients, it actually can also make the nutrients easier for your body to absorb. So there is a nice trade off there.

- Slice up the zucchini.

- 3 sliced Zucchini
- 2 tablespoon Olive Oil
- ¼ Grated Parmesan
- Pepper to taste
- Pre-heat your oven to 400.
- Slice up your zucchini into bite sized chips discarding the ends.
- Toss the zucchini with olive oil, then add parmesan and pepper and toss until evenly coated.
